The cave itself grows with you, room by room, as you carve out space for cheeses that ripen at different speeds, from a quick afternoon batch to ones that need three full days. Apprentices help tend the wheels and keep the work moving, and the grating at the front is where your cheeses become notes in your pocket. The County Show is your chance at a rosette, a small triumph for a well aged wheel.
